| Zucchini Bread |

| 1 1/4 c. Nabisco 100% Bran 1 1/2 c. unbleached flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. pumpkin spice 1 c. firmly packed brown sugar 3/4 c. margarine 3 eggs 2 tsp. vanilla 2 c. shredded zucchini 1 c. chopped apple 1/4 c. raisins or dates 1/4 c. pecans |
| Combine the first five ingredients and set aside. Next, mix brown sugar, margarine, eggs and vanilla. Stir in the shredded zucchini, apples. Now add the dry ingredients. Add raisins and pecans. Spread in a greased and floured 9x13 pan. Bake at 325-350 for about 40-45 minutes or until done. Cool and serve. Suggestion: Dust with powdered sugar. |
