2 tsp. baking powder
1 tsp.  salt
4-6 Tbsp. vegetable shortening or lard
about 1 1/4 cups warm water(anise tea)
1 Tblsp. sugar(optional)

This is a simple recipe for making bunuelos. The old fashioned way is to use a basic tortilla recipe. Bunuelos are rolled out thinner, with a little hand stretching and fried to
a delicate crisp. Sprinkled with a generous amount of cinnamon and sugar.
Mix the flour, salt, sugar and baking powder in a large bowl. Cut in the shortening with
a fork or the old fashioned way with your hands. Slowly, add the water or if you prefer
a little anise flavor use anise tea. The water should be warm, not necessary to be very hot. Knead.

After you knead your dough,
divide into at least 12 dough balls. The size depends on the size of the pan you will use to fry the bunuelos. With a rolling pin or palote roll out a thin tortilla. You can do a little hand stretching to make them thinner.

The usual practice is to roll them all out, lay them on a table or counter and let them dry for a few minutes. Then, place them in hot oil. They should be lightly browned on both sides.

Lay them on a paper towel to drain excess oil. Sprinkle generously with a cinnamon sugar mixture. They have been a tradition and a family favorite in the Mexican family.
