| Biscochos |
| Biscochos are the New Mexico version of the traditional Mexican cookie. They are served at weddings, baby showers, anniversaries most special occasions Make into heart shapes, diamonds, stars or a simple square. |
| 6 cups flour 1 1/2 cups sugar 1 tsp. salt 1 Tblsp. baking powder 1 tsp. clove 2 tsp. cinnamon 2 eggs 2 cups lard 1/4 cup pineapple juice or orange juice |
| In a large bowl mix the dry ingredients: flour, sugar, cinnamon, clove, baking powder and salt. Cream the lard, eggs and pineapple juice. Add dry ingredients to the lard, egg and juice mixture. Mix well. Knead. Dust counter with flour and roll out and cut out desired shapes. Preheat oven to 350 degrees. Bake for 12 - 15 minutes. While warm dust with cinnamon and sugar. Enjoy! |
